Hello beautiful people, I may be a little late but I’ve just discovered the goodness of that which is avocado as a sub for mayo! The picture above is from my instagram. Let me tell you, my love for avocadoes has been taken to a whole other level now! Not only can a chop it up for a bean salad or mash it up and have it on toast with eggs but now I can have it with tuna! I’m sure you can relate to my enthusiasm as I know many of you get excited too when you eat something healthy that tastes good to boot!
I had a taste for tuna salad and didn’t want to use mayo like I normally do when I make it. I thought about trying to substitute mashed avocado for mayo instead. Of course I searched Pinterest and upon my first scroll down the page I found a recipe I wanted to try that included some of my other faves red onion and cilantro. I remembered I had a ripened avocado on hand and after mixing all of the ingredients (at least the ones I had)…I didn’t have fresh cilantro, lime juice or garlic salt so I just worked with what I did have (dried cilantro, lemon juice, and garlic powder)…It worked and it was delicious!
