Avocados have been a mainstay in my diet for years now. I can’t tell you how that happened besides the fact that I just explored my options. The only time I consumed guacamole was with my burrito bowl at Chipotle or just as a dip with tortillas. Now, I’ve expanded my palate to include avocados made in different dishes from the salad I posted yesterday to avocado toast, avocado and egg pizza (it tastes better than it sounds), and bean salsa with avocados. The key to incorporating different foods that you like but have the potential to love is to try them with different foods that you DO love.
I like tortilla chips so I ate guacamole with chips. Then, I moved on to putting it in my burrito bowl. I love beans and there’s a bean salsa that I make which includes avocados in the recipe. I also love eggs. Specifically, boiled egg whites with toast. I was inspired by a picture of egg whites with avocado on toast which piqued my interest. So, I tried it and I’m glad I did! A few things to take from this post: Whatever way you eat them, avocados are good for you and pinterest is your friend. In case you don’t already, use pinterest as inspiration to try new recipes and foods. It’s helped me look at food in a whole other way. What are your favorite ways to eat avocados?
